About The Cook Lab

The Cook Lab started with the Laynes family in Santiago de Surco, Lima, a district where culture is passed down through food. Surco grew among vineyards around its church of Santiago Apóstol, founded in 1571. In the 1930s it had 47 wineries, where neighbors bought the wine for their family lunches, and since 1937 its Vendimia, the grape harvest festival, has celebrated with wine, tamales and the district's own huatia and sopa surcana.
The Laynes family was big enough to turn every get-together into a feast of Peruvian cooking and a great time. Today The Cook Lab brings that table to New Jersey: Peruvian recipes tested and perfected in our kitchen until they taste just like home, made for your breakfasts, office lunches and celebrations.
